Coconut

I am way behind in blogging about Gabe's birthday which was in August but I figure better late than never. Life is crazy busy and I simply haven't had the time.

Meet the newest member of the Bentley household. This is Gabe's fish - Coconut.



Aunty Shanna started a fun tradition this year. That is, for each cousins second birthday she buys the bithday boy or girl a fish. Gabe was thrilled when he opened his present from Uncle Brian and Aunty Shanna. We were all over at Nana and Pappa's house opening presents and after he opened his fish Brad and I asked him what he wanted to name it. We weren't sure too sure what he was going to say- he is after all 2! After us asking him a couple of times he turned to us and as clear as day said "Coconut". Coconut it is then we said. We all started laughing hysterically at this smart little two year old who named his very own fish Coconut. Hearing Gabe say coconut in his cute little munchkin voice was pricless.

It has now become part of our morning and evening routine to feed Coconut. Gabe gets so excited to feed him/her (lol not sure of the sex- just shows what I know about fish) and it is so cute to watch him do it.

Thank you Aunty Shanna and Uncle Brian...we love you!

Fried Zucchini Coins

My mother in law has had an abundance of zucchini in her garden this year. Before this year I had never actually tried a zucchini. In keeping with my goal of introducing new foods into my cooking this year, I took a few home and had some fun with them. I made these as a side to serve with dinner when my mother and my brothers came over for dinner back in August to celebrate August birthdays.

These were simple to make and were really delicious. Next time I make these I want to try using panko breadcumbs for a little extra crunch.

Fried Zucchini Coins
By Nat


1 medium to large zucchini
2 eggs
1 tsp salt
1/2 tsp pepper
1 cup of dried breadcrums (fresh won't stick)
1/4 cup of freshly grated parmesan cheese

Cut zucchini into slices and set aside.

In one mixing bowl mix 1 cup of breadcumbs (dried and not fresh is best for this recipe)and the parmesan cheese. Set aside.

In a second mixing bowl combine eggs, salt and pepper.

Begin by dipping zucchini into egg mixture and then take it and dip it into the bread crumb mixture.

Fry breaded zucchini in a skillet dotted with butter until golden.

Serve warm- ENJOY!

Like Father Like Son

Uncle Blaine just sent me this picture via text. It was too cute not to share.

Gabe is so much like is Daddy. Gabe loves to watch and "help" Brad when he is working on cars in our driveway. He loves to hand Brad tools, water bottles and whatever else he needs. He is the cutest little assistant ever!!!!
